Oh hi. The other day I had been in New Mexico due to an urgent family matter. As the situations were unfortunate, I was lucky enough to spend time with many of my family associates that I hadn’t observed in over a year.
While down generally there, I learned that a few of my cousins recently started doing Crossfit. I’ve been anxious about Crossfit, most likely because onetime I watched the Crossfit video games on ESPN and noticed women flipping tires and bulked out like the Hulk. That’s awesome, but it’s just not me. However, I needed a good workout and my cousins certainly didn’t appear bulky, so I decided to join an afternoon sweat session.
And do you know what?! It was AWESOME. Yes, it had been hard and my legs were sore for a few times, but I loved the energy and lifting facet of the class. I can certainly see how you can get easily toned. I’d love to understand if any of you have ever done Crossfit!
So let’s get to it…
Of course, you know me, Trader Joe’s grocery lapper. Even though I had been pacing across the produce section pondering what I’d make following, I considered how awesome a southwest meatless meatloaf would be. I’ve had my mom’s lentil loaf plenty of situations and was craving something a little bit different.
Later that time, I had been taking this loaf from the oven, topping it with some creamy, spicy sauce and licking my dish like I hadn’t eaten in times.
FYI, when your home is alone, it’s simple enough to lick your dish because no one is watching/judging you. Well, except Milly (my excessively curious kitty).
We ate this loaf for a couple times then froze the rest of the slices for later. Works out, it still tastes excellent when reheated. I’d however recommend departing the sauce off in the event that you plan on freezing.
So what do you consider? Nearly 13g of protein and 15g of fiber per serving. MAY I get a YES!
1 carrot, shredded
2 teaspoons cumin
1/4 cup finely diced cilantro
2 (15 oz) cans black coffee beans, rinsed and drained
3/4 cup special corn (organic favored)
1/2 cup gluten free oats
1/2 cup gluten free oat flour (you may make your very own!)
newly ground salt and pepper, to taste
For the sauce:
1/2 avocado, mashed
Preheat oven to 350 degrees F. Grease a 9 inch loaf pan with nonstick cooking food spray or series with parchment paper.
Mix flaxseed food and 1/2 cup water to a small dish and place in the refrigerator while you make the rest of the loaf. The flaxseed meal can help bind the loaf collectively.
Place large pan over medium heat and add 1 teaspoon of essential olive oil. Once oil is hot, add in onion, garlic clove, bell pepper, carrots and jalapeno; saute for 5-7 minutes or until onions are translucent and carrots begin to soften a little. Transfer to a large bowl and stir in spices and cilantro; set aside.
Utilizing a blender or food processor, blend beans from 1 can easily. Transfer towards the bowl with the sauteed vegetables, and mix in the remaining beans combined with the corn, oats, oat flour, and flaxseed meal (through the fridge!). Add salt and pepper, then flavor and add more spices or sodium and pepper if preferred.
Insert mixture to prepared loaf pan, pressing and smoothing aside to make sure it bakes evenly. Bake loaf for about 35 minutes. Remove from temperature and cool for 5-10 moments.
Make the sauce by combining salsa verde, mashed avocado and cilantro inside a medium dish. Smooth over black bean loaf once ready to serve. Makes 4 portions.
This is freezer-friendly, simple wrap tight or place in a freezer safe ziploc bag. Will remain good for as much as 3 months. You can also bake and freeze it within the loaf skillet, just ensuring that it is firmly covered.
I would recommend leaving the sauce off in the event that you plan on freezing.
